The great thing about this recipe is that there’s no waiting around. You just need two cups of your fed sourdough starter, and it doesn’t matter if it’s cold from the fridge. Just ensure you fed your starter and let it ferment before refrigerating it. If you didn’t, it’ll need some time to ferment.

Prep Time: 5 minutes Cook Time: 2 min each side
Servings: 4

Ingredients:

  • 2 cups [240 g] active sourdough starter
  • 2 Tbsp [40 g] honey
  • 1 tsp [5 g] baking soda
  • 1 tsp [6 g] salt
  • 2 eggs
  • 4 Tbsp [57 g] butter, melted for batter and more for frying.

Instructions:

  1. Whisk all ingredients together except for the soda
  2. Sprinkle baking soda over the batter and gently fold it in.
  3. Heat a griddle or frying pan over medium heat with butter until melted
  4. Pour 1/4 cup [36 g] of batter onto the hot griddle for each pancake.
  5. Cook until bubbles form on the surface of the pancakes and the edges are set.  
  6. Flip the pancakes and cook until golden brown.
  7. Serve with your favorite toppings.
